Shiitake

Shiitake, also known as edible tuber (Lentinula edodes), is a wood-boring mushroom - it grows on wounded trees, stumps and branches, mainly of deciduous trees, which it uses as a source of nutrients.

This medium-sized mushroom has a light to dark brown cap covered with scales and firm flesh. Its distinctive, strong aroma and sweet taste make it widely used in cuisine, especially in East Asia. Fresh and dried shiitake mushrooms are a popular ingredient in miso soups, stir-fried, boiled and steamed dishes.

In addition to its culinary uses, shiitake is also known for its medicinal properties. It is rich in essential amino acids, minerals, B vitamins, provitamin D2 and many other bioactive substances. Its active ingredients are valued by traditional Chinese medicine for their antiviral, antibacterial and anti-inflammatory properties. It helps with cancer, cardiovascular and other health problems.

 

HISTORY

The origin of shiitake dates back to the forest areas of China and Japan, where mushroom became part of traditional cuisine and culture thousands of years ago. It was considered not only a delicious culinary ingredient, but also a symbol of health and longevity.

Shiitake began to be cultivated on a larger scale in Asia around 1000 AD. In Japan, it is mentioned as early as 199 AD in writings where it is described as a remedy for treating diseases. According to legend, shiitake was given to the emperor by the Kyusuya tribe. In Chinese herbaria, it is even referred to as the "elixir of life".

Today, mushroom is popular not only in Asia, but also in international gastronomy and natural medicine.

CHEMISTRY

Shiitake is rich in β-glucans, vitamins B2, B6, C, D and E, minerals such as copper, selenium, zinc and manganese, and other antioxidants. These substances support vitality, the immune system and contribute to longevity. Beta-glucans also help improve digestion and promote healthy gut flora, which has a beneficial effect on digestion and the treatment of gastrointestinal disorders.

This mushroom also contains a unique substance called erythadenine, which helps to lower blood cholesterol levels. We also find here the polysaccharide lentinan, which strengthens the immune system by promoting the production of immune cells.
